The fresh fish we use is carefully selected by the owner from fishing ports and Toyosu Market. Our special ingredients are meticulously prepared using salt, vinegar, and kelp for curing and aging. Not only do we pay great attention to procurement and preparation, but one of our unique practices is to serve sushi by hand.
