While cherishing the classics, we also adapt to the times. The rice, which determines eighty percent of the flavor, is treated with the same care. At our shop, we currently use two types of red vinegar and salt only, to bring out the umami when combined with the fish. The fish is sourced from fresh fish caught in nearby seas as well as seasonal ingredients delivered daily from all over the country. We prepare the ingredients to maximize their deliciousness, finishing each piece to perfection. The appetizers served before the nigiri also offer a unique flavor with a sense of the season. The dishes, mainly Karatsu pottery, add a colorful touch.
